Maple Carrots

This is the most delicious side dish. Whenever I make this I have to TRIPLE the recipe and there is never a left over carrot.
This recipe is great anytime of year, but it is a staple at the Holiday.
Ingredients
1 tablespoon unsalted butter
6 medium carrots peeled and chopped
1/2 c low sodium organic chicken broth or vegetable broth
2 tablespoons organic maple syrup
Salt and pepper to taste
Instructions
Melt butter in large skillet over medium heat
Add the carrots, stir and cook for 5 minutes
Add broth, maple syrup, salt and pepper
Cover the pan and reduce heat, let simmer 15-20 minutes or until carrots tender
Uncover, increase heat to medium high and cook 2-3 more minutes or until sauce reduces and thickens by half. Salt and pepper to taste.
